What we ate Wednesday

I really had planned on posting this blog last night but honestly, after going to walmart and cooking a yummy supper last night, I was pooped so Hubby and I settled on the couch and watched American Idol. I am so loving this season!
One of my favorite ever pizzas is from Sonny's Pizza in Vidalia- The Taco Pizza and man have I had it on my mind lately wishing that someone around Bossier had something similar when I thought, you know I can make SOMETHING like it! I documented my recipe by photos (Hubby asked why I was taking pictures and I told him "Well, I want to post it on my blog" which he replied with rolling eyes and walking away, he's not on the blog bandwagon yet) ANYWAY, I came up with this recipe by expanding on a taco ring recipe that I have used in the past- Super Yummy!!

Ingredients:  This was prepared for 2 so you can double it for a family
1 can crescent rolls
1 lb ground beef
1 packet of Taco Seasoning
1 can refried beans
1 package of shredded cheese (Mexican blend)
Shredded lettuce
diced tomatoes
sour cream

I started off by browning the ground beef then draining it and adding the taco seasoning and water and let the flavors meld. I set my oven to 350 Degrees.

Next I spread out the crescent rolls in a square (I always cover my cookie sheets with aluminum foil because it makes clean up SO EASY!! I have also found the new non-stick Reynold's wrap and I'm hooked)

I spread refried beans on top of the crescent rolls (I found that using the back of the spoon made it a lot easier to spread, you can also put sour cream over the refried beans) After the taco meat is ready I layered that on top of the crescent rolls and popped it in the oven for about 5 minutes.

Right before the crust was ready I topped the pizza with cheese and put it back in the oven for another minute and then again when I pulled it out (we LOVE cheese)

I cut the pizza into rectangles and topped with all of the goodies.

This was a very easy and yummy supper. When asked to rate the dish Hubby gave it a 6 (which is really high for him- since a 10 is the best meal we'll EVER eat) It's something that I'll definitely do at least once every few months and will be a great meal when we have a little one!

Feelin Pudgy

"Just because it zips doesn't mean it fits!" Joan Rivers

I heard this quote this morning while watching TV and almost fell off the couch laughing. This is definitely how I am feeling these days. I cringe anytime that I have to go anywhere because I know I'll have to find something to wear. Although sweat pants and pj pants still fit my pudge my other pants are quickly getting tighter around the middle! There have been several times that I have delighted in a pair of pants fitting in the closet only to look in the mirror to realize that it doesn't fit AT ALL!

On a lighter note I am finally hungry again! This afternoon I demolished a chocolate vanilla swirl jello pudding cup and nothing has ever tasted so delicious!

I am starting to feel much better these days with my only symptoms being tired really easy and an ever present headache! Although I know I am very lucky because I've had an easy first trimester, I'm glad to be over the constant nausea. Now I'm ready for that cute little baby bump! Any time that I see any fellow pregnant ladies I have to admit I definitely have bump envy!

The Other Half of my Brain

I think that every girl in the world has had at least one if not several "Best Friends" I definitely have several girls who fall into that category and I  love each and every one of them because they each bring something different to my life. I have the creative friend, the funny friend, the fashionista friend, the music genius friend, the advice friend, the list goes on. I have to admit I'm a lucky girl to have such wonderful friends that I can go to for one thing or another.
But then there is my friend who is literally the other half of my brain, I'm totally not kidding. This girl and I can finish each others sentences so much so that sometimes it's a little creepy. She is the rational side of my brain and when I feel like a total crazy person or just need to cry to someone (which is happening A LOT these days) she is there no matter what and always with wonderful advice. My friend is honest, like the kind of honest that most friends are not but in a way that makes me see another perspective and she does it in a way that doesn't hurt my feelings or make me angry. The very best thing about my friend is that she is genuinely just as excited to be my friend as I am to be hers.

11 week update!

I officially feel like my body has been taken over by hormones. In the last 24 hours I have cried watching American Idol, Biggest Loser last night and The View this morning. Granted all of these are touching stories but none that I would normally cry over! I also get aggravated incredibly easy and my poor Hubby just takes it in stride.
On a good note, I did actually cook supper last night for the first time in at least a month! Hubby has been so deprived of "Real Food" because all I will eat is a handful of chips here, yogourt, crackers or popcorn! Last night I made delicious Broccoli and Rice Casserole with Chicken and it was great, even Hubby gave a thumbs up!

How far along?: 11 weeks
How big is baby?: the size of a lime!
Weight gain?: I weighed over the weekend and so far I've gained 2 pounds
Stretch marks?: no and I'm praying that my nightly rub down with Tummy Butter pays off
Maternity clothes?: Still too soon but my pants are definitely snug
Sleep?:  I've been sleeping ok this week
Best moment this week?: Talking to other expecting Mommas!
Food cravings?: Blue Raspberry Icees, BBQ sandwhiches- I've had neither :(
Gender?: We still have a few weeks until we find out but my intuition says girl
Movement?: None yet but I can't wait
What I miss?: Excedrine! I've had a migrane since friday and regular strength tylenol isn't helping
Labor signs?: Not hardly :)
What I'm looking forward to?: Getting my baby bump instead of a pudgy looking belly!

10 week update!

I think it's safe to say that I finally have my appetite back. I just chowed down on HALF A BAG of ruffles sour cream & onion chips....can you say delicious??? It's definitely a welcome change to the "nothing looks good" option. I still get queasy when my tummy gets empty but watching food on TV doesn't make me want to toss my cookies anymore!

I am going to start doing a weekly baby update because let's face it, everybody wants to know this stuff! haha

How far along?: 10 weeks
How big is baby?: the size of an olive!
Weight gain?: nothing really so far but I can tell my middle is getting "thicker" no bump, just pudge!
Stretch marks?: no and I'm praying that my nightly rub down with Tummy Butter pays off
Maternity clothes?: Still too soon but my pants are definitely snug
Sleep?: I was sleeping like crazy up until last night when I suddenly became a night owl!
Best moment this week?: Talking to Hubby about baby, we are SO EXCITED!
Food cravings?: Chips, Ice Cream, pizza
Gender?: We won't know that for a while but Mommy has a feeling we will be buying PINK!
Movement?: None yet but I defintely can't wait for the first flutter I've heard so much about!
What I miss?: Cokes! I drink caffine free but anytime we go out to eat I have sweet tea or water.
Labor signs?: Not hardly :)
What I'm looking forward to?:  Oh goodness, first baby flutters, finding out the gender and holding my sweet baby!

Baby Thomas

From the fullness of grace we have received one blessing after another - John 1:16

Words cannot even express the extreme joy and full-out giddyness I feel in my heart every day since finding out that I'm going to be a mother! The fact that I am growing a wonderful and beautiful life amazes me most days and totally confuses me others. I still haven't fully grasped the concept and most days even question if I really am pregnant until another wave of nausea hits.
To say this sweet baby is a suprise is an understatement. Although Hubby and I had discussed having kids since this was something we both desperately wanted and didn't want to wait until we, our parents and our grandparents were older, we weren't planning on full out "trying" until well into the year. I started praying to God all day every day and every night that we would be able to have healthy happy babies because I honestly thought it would take us a long time. I'm not sure why I thought this, we are both healthy with no real threats, I just had a feeling so I prayed, a lot!
I was still playing with the idea of being a mother and us having a child as a newly married couple, when I woke up on the morning of my college graduation and had a feeling. That nagging feeling that maybe, just maybe something was different. I took a test and got results immediately. I paused for a second and started crying, I mean full on sobbing and thanking God for this most wonderful and beautiful blessing on our lives. Then my brain started reeling with thoughts "we JUST got married!" then "what in the world is Hubby going to say" and then the final and most guilty feeling overcame me "my poor Momma and Daddy will be three and a half hours away from their first grandbaby" and I cried even more.
I sat in my bed and thought and prayed and continued to cry for hours that morning feeling hundreds of feelings but most of all pure joy and thankfulness. I finally got dressed and ready to go because I still had graduation to go to! Hubby got home a few hours later and he was in a rush because for the first time in his life he was running late and we had to drive an hour to get to Natchitoches. Of course he thought it was odd that I was totally dressed and ready to go because honestly, that NEVER happens.
He was running around the house like a crazy person when I finally told him that he had an early Christmas present to open and he looked at me like I was crazy and said "do you realize how late we are?" I laughed and said just open the present. He did and found the positive test and was in a state of pure shock but super excited and kept asking me Really?

A few weeks later we went to the doctor and got to see our little Sweetie and hear the heartbeat. As soon as the ultrasound lady left the room, I looked at Hubby and my eyes filled with tears. Everything was totally and completely real at that very moment.
